Main Dish: Gluten Free Breaded Parmesan Chicken: (Serves 4-6)

1 cup gluten-free all-purpose flour                    2 tsp. salt
2 tsp. paprika                                                1/4 tsp. pepper
2 eggs                                                           3 Tbsp. milk
2/3 cup grated Parmesan cheese                     1/3 cup OMG...It’s Gluten Free Bread Crumbs
3-4 lbs. skinless chicken breasts or thighs

In a pie plate or shallow bowl, combine the flour, salt, paprika, and pepper.

In another bowl, beat the eggs and milk. In another pie plate or shallow bowl or pan, combine the Parmesan cheese and the corn flake crumbs or bread crumbs. Coast the chicken pieces with the flour mixture, then dip in the egg mixture, then roll in the cheese/crumb mixture. Place in a well-greased, foil lined baking pan. I usually use a jelly roll pan (about 15"x10"x1").

Bake at 400° for 50-55 minutes or until chicken tests done with a thermometer (165°)

Side Dish: Steamed Vegetables

3 cups raw vegetables (chopped)
Boiling water

In a large sauce pan, bring water to boil. Add in raw vegetables and cover. Let steam, checking periodically and removing vegetables as they finish. Season as you like (salt, pepper, or olive oil).

Dessert: Brownie Sundae Overload

4 OMG...It’s Gluten Free Brownies, (crumbled)
Chocolate Syrup
4 scoops vanilla ice cream

Scoop ice cream into bowls, top with crumbled brownies, drizzle with chocolate syrup, and enjoy!
