Grilled Garlic Shrimp

1½ pounds jumbo shrimp, cleaned, deveined, shelled           1 garlic clove, grated
1½ tablespoons dry white wine                                                    2 tablespoons olive oil

Garlic butter sauce
3 tablespoons butter             2 garlic clove, grated
¼ cup dry white wine            diced red peppers (optional)

Heat grill to medium heat. For the marinade, place the shrimp, garlic, white wine and olive in a large bowl. Season with salt and pepper. Marinate for 10-15 minutes. Grill the shrimp for about 3-4 minutes until cooked. Move cooked shrimp to a plate. For the sauce, add the butter, white wine, and garlic to a small pan over low heat. When the butter is melted, and the garlic fragrant, remove from the heat. Serve butter sauce on the side, or pour over the grilled shrimp.

Grilled Asparagus

1 pound fresh asparagus spears
1 tablespoon olive oil
Salt & pepper to taste

Preheat grill for high heat. Lightly coat the asparagus spears with olive oil. Season with salt and pepper to taste. Grill over high heat for 2 to 3 minutes, or to desired tenderness.

Grilled Corn

5 cloves garlic, minced                      1/2 cup butter
1 tablespoon white sugar                  1 teaspoon salt
1 teaspoon ground black pepper     ½ lime, juiced
6 ears fresh corn

Preheat an outdoor grill for medium heat, and lightly oil the grate. Heat the garlic and butter in a small saucepan over low heat for 5 minutes to infuse the butter with the flavor of garlic. Do not let the butter simmer. Stir together the sugar, salt, and black pepper in a small dish. Stir into the butter mixture along with the lime juice and hot sauce until evenly blended. Brush the ears of corn generously with the garlic butter; reserve remaining butter. Cook the corn on the preheated grill, rotating occasionally until the corn is hot and tender, 10 to 15 minutes. Brush the corn with the remaining butter as the corn cooks.
